Chocolate Avocado Pudding

Healthy fat and fiber packed into a delicious and creamy dessert. This is decadent healthy treat. This one will have you feeling satisfied quickly too. Sweetened with lower glycemic ingredients. This one won't give you the blood sugar rush and crash.

Equipment

  • 1 Mixer, blender or food processor the high speed of a processor or blender works the best.

Ingredients
  

  • 1 whole Ripened avocado
  • 1.5 tbsp raw honey coconut or date sugar or maple syrup are good alternatives
  • 1/2 tsp vanilla extract
  • 1 pinch sea salt
  • 2 tbsp milk of choice
  • 2 tbsp chocolate chips optional - 1 Tbsp per serving

Instructions
 

  • Remove avocado from skin and pit and place in blender, processor or mixing bowl
  • Add all other ingredients
  • Blend or mix well
  • Taste test and add additional sweetener or milk (consistency).
  • When flavor is desired, place in a small serving dish. Top chocolate chip, if desired.
  • Have leftovers? Save in airtight glass container in fridge.

Notes

Like chocolate mint flavor?  Add a drop of peppermint oil (essential oil).
